The Greenbank Hotel with Fiona Were

In a world dominated by male head chefs I was thrilled to be eating from Fiona Were’s astounding menu. Coastal doesn’t even come close. Sat next to the panoramic view of the Fal Estuary, watching sailing boats bob up and down on the silky dolphin grey sea, this was dinner with a most hypnotic view.

The menu changes daily according to what is fresh, seasonal and I think that this is Fiona’s USP. The ability to create from scratch, a culinary prowess perhaps. I was treated to the Tuesday menu (it being a Tuesday and all that) and was spoilt for choice. Eyes greedily expanding and waistline cringing at the onslaught of delicious fare I began with a glass of Chenin Blanc. In fact choosing was difficult as I was constantly distracted by the sea. Though only a Tuesday that Friday feeling of relaxation is paramount both in the nautical interior choices and the wonderfully sweet attitude of the waiting staff.

The menu is brilliantly designed. Simple and very easy to navigate (possibly due to the distracting nature of the location). I started with Tongue; crispy cured beef tongue, tempura sweetbreads, pickled beetroot, golden mustard and radish. It was so succulent and meaty yet delicate and moreish. I opted for seafood, needless to say it was locally and sustainably caught fish, Cod; roasted cod fillet, black turtle beans, pancetta, gooseberries and gem lettuce. Perfectly executed, so flavoursome and fragrant.

It was with some difficulty that I chose dessert. And I discovered something that has haunted me with its deliciousness. It is calling to me now, that taste memory, as I write from my scrawled notes. Let me introduce you to something that with change your food life forever. I have not come across it anywhere else. It is utter brilliance (Fiona – you are amaze).

Olive Oil Ice-cream

Actually the dessert was Fig; spiced fig tarte tatin, olive oil ice –cream and salted walnut praline. And yes it worked wonderfully together, but that ice-cream. Oh. It is on that quite frankly bordering orgasmic note I implore you to venture to Falmouth’s shores and make sure you get a hit of it.
